Father’s Day

With Father’s Day (20 June) coming up, the kids and I will do what we’ve done many times before and prepare a special breakfast for dad. And this year we’ve picked a healthy option – a recipe for poached eggs and ham on a bagel has been especially developed by nutritionists to offer a perfect start to the day for men.

You’ve been boiling, scrambling and frying over the last few months, and the next masterclass is poaching eggs. Many people find this tricky but it just takes a little bit of practise. I did lots of poaching when I was preparing for the Eggs Factor regional finals, and I’m glad I got the hang of it as it’s such a nice way of eating eggs.

Here’s my recipe for perfectly poached eggs:

Eggy election snack

I’m sure I won’t be the only one staying up late to watch the outcome of the election tonight. Try this healthy snack to help keep energy levels up:

Egg and cress dip

Prep: 5 mins + cooling
Cook: 7 mins
Serves 4

6 large British Lion eggs
4 tbsp low fat mayonnaise
50g/2oz watercress, chopped
salt and freshly ground black pepper
pitta bread, carrot sticks breadsticks etc to serve

  1. Place the eggs in a medium pan of cold water. Place on the hob and slowly bring to the boil. When boiling simmer for 7 mins. Then drain, rinse in cold water and tap the shells all over, leave to cool.
  2. When cold peel away the shells. Roughly chop the eggs and mix with the mayonnaise, watercress and seasoning. Spoon into small tubs and chill until required.
