Now spring is finally here I want to be making lots of lovely picnic food for lazy afternoons in the park.
I’m probably not the only one using eggs in sandwiches and baguettes, but for the more adventurous cook, home-made scotch eggs are a treat. This recipe is actually one of Paul Merrett’s – the chef from the BBC show Economy Gastronomy. It’s a delicious recipe and, best of all – not at all difficult to make:

The ever-popular scrambled eggs is a quick and easy recipe. A really creamy scramble is delicious, healthy, and extremely versatile. Scrambled eggs work well in wraps, burgers and are a brilliant accompaniment to fish. It’s also really easy to add herbs and spices for that extra zing– Indian spices or Italian herbs work equally well.
Here’s my recipe for basic scrambled eggs:
