Luxury hot-smoked salmon kedgeree

250g basmati rice

150g hot-smoked salmon

1 large onion

1tsp madras curry powder

Salt & pepper

Method
Slice onion thinly and fry gently in low calorie cooking spray until semi-caramelised
Place the eggs in a pan, add boiling water and simmer for 12 minutes. Once hard boiled, cool and peel.
Put rice in another pan and cover with boiling water. Stir once then boil for 10 minutes
Flake the salmon and place on a microwavable dish. Five minutes before the rice is cooked, heat the salmon for 4 minutes on the lowest power setting
To assemble the dish, drain the rice well and keep it warm. Slice the eggs. Return the rice to the pan and add the curry powder and onions. Season to taste. Add the salmon and stir in gently to avoid breaking the flakes
Spoon rice mixture onto a warm plate and garnish with the sliced egg. Serve immediately
