Mediterranean salad

Ingredients

Preparation time: 10 mins, cooking time: 10 mins, serves: 10.

A catering size portion of mediterranean salad - perfect for parties or a great menu addition.

Method

    1. Arrange the lettuce leaves decoratively in a large, shallow serving bowl.
    2. Combine all the other ingredients, except the eggs, olives and French dressing.
    3. Decorate with the egg halves around the perimeter of bowl and olives in the centre.
    4. Spoon French dressing over each portion just before serving.
