Mediterranean salad

Ingredients

  • 1 large firm crisp lettuce
  • 1 red pepper, finely sliced
  • 1 green pepper, finely sliced
  • 1/2 cucumber, diced
  • 225g (80z) cold cooked French beans, cut into short lengths
  • 4 x 198g (7oz) cans tuna fish, drained
  • 450g (Ilb) tomatoes, peeled and quartered
  • 15 medium British Lion eggs, hard boiled and halved
  • Stoned black olives
  • 125ml (1/4pint) French dressing

Preparation time: 10 mins.

Cooking time: 10 mins.

Serves: 10.

A catering size portion of mediterranean salad - perfect for parties or a great menu addition.

Method

    1. Arrange the lettuce leaves decoratively in a large, shallow serving bowl.
    2. Combine all the other ingredients, except the eggs, olives and French dressing.
    3. Decorate with the egg halves around the perimeter of bowl and olives in the centre.
    4. Spoon French dressing over each portion just before serving.
