Muffin burger
Ingredients
- 2 ½ oz/65g butter or low calorie spread
- 10 muffins, plain or wholemeal –split in half and toasted
- 10 medium British Lion eggs
- A little oil for frying
- 1 round lettuce, washed and drained
- 2 sliced tomatoes
- 1⁄4 cucumber, sliced
- 5 tbsp corn or tomato relish
Preparation time: 5 mins.
Cooking time: 5 mins.
Serves: 10.
A healthy alternative to a traditional burger. The kids will love the runny egg!
Method
- Spread the toasted muffins with a little butter.
- Fry the eggs over a gentle heat taking care not to overcook them otherwise they will become tough and crisp.
- Baste the eggs with a little oil and cook until the white is just set and firm.
- Fill each muffin with the lettuce, tomato, relish, and top with the fried egg.
