Muffin burger

Ingredients

  • 2 ½ oz/65g butter or low calorie spread
  • 10 muffins, plain or wholemeal –split in half and toasted
  • 10 medium British Lion eggs
  • A little oil for frying
  • 1 round lettuce, washed and drained
  • 2 sliced tomatoes
  • 1⁄4 cucumber, sliced
  • 5 tbsp corn or tomato relish

Preparation time: 5 mins.

Cooking time: 5 mins.

Serves: 10.

A healthy alternative to a traditional burger. The kids will love the runny egg!

Method

    1. Spread the toasted muffins with a little butter.
    2. Fry the eggs over a gentle heat taking care not to overcook them otherwise they will become tough and crisp.
    3. Baste the eggs with a little oil and cook until the white is just set and firm.
    4. Fill each muffin with the lettuce, tomato, relish, and top with the fried egg.
