Open sandwich
Ingredients
- 8 medium British Lion eggs, hard boiled
- Salt and pepper
- 10 lettuce slices
- A little butter
- Creamy mayonnaise
- Fresh parsley to taste
- 10 slices of toast

Serves: 10.

Method

Make several cuts part way through a whole hard-boiled egg and fan egg slices.
Place a lettuce leaf on the buttered bread slice and position the egg on top of this.
Pipe a decorative border of mayonnaise over the egg. Sprinkle chopped parsley over sandwich.
