Sunny potato eggs
Ingredients
- 10 ready cooked or microwave hot cooked jacket potatoes
- 10oz/275g cheddar cheese (grated)
- 5 medium British Lion eggs, beaten
- A dash of Worcestershire sauce to taste
- 20oz/50g butter or low calorie spread (melted)
- Salt and freshly ground pepper
- 4 spring onions (toped tailed and chopped)
- A little freshly chopped parsley to garnish
Preparation time: 10 mins.
Cooking time: 20 mins.
Serves: 10.

Method
- Core the potatoes, scoop out the insides and mix with the eggs, cheese, butter and spring onions
- Pile the mixture back into the potato jacket and reheat in the microwave for 2 minutes on full power or in a reheated oven at gas mark 6, 200C for about 20 minutes.
- Sprinkle some fresh parsley on top
