When it comes to eggs, there is good news all around on the health front. They contain vitamins, minerals and high quality protein and there is no need to worry about the number of eggs you eat – health experts have lifted previous limits on egg consumption. They may even help you stick to your diet – research suggests that eating foods high in protein may help you feel fuller for longer. But how do you create truly delicious healthy meals with eggs? We’ve asked professional chef Sophie Wright, one of Britain’s youngest culinary stars, to create some quick and easy ideas for eating well without comprising on taste. You’re bound to like the sound of her Moroccan eggs, creamy scramble with haddock or a soft boiled egg, bean and tuna salad.
